Delicious Wheat-Free Oat Walnut Scones                        


















Preheat the oven to 400 F (200 C) degrees. In a bowl large enough to hold all the ingredients, mix the
dry ingredients together, then add the butter and, with your fingers, blend until coarse crumbs are
formed. In a separate bowl, beat the egg with the milk and vanilla, and stir into the dough. Mix just
enough to moisten the dry ingredients evenly, do not overwork or the scones will be tough. Turn the
dough onto the counter/bench (for a nice touch, you can use oatmeal flakes as bench flour), and pat
into a circle. Cut the dough into 6 wedges and place on a sheet pan. Bake until lightly browned, 15-18
minutes.            

About the ingredients: Oat and spelt flours are available at health food stores, you can use either white
or whole wheat spelt flour. Blood types B and AB would do best to use cow's milk (whole is best, but
others can be used), Blood types O and A would be better off with soy milk. The walnuts are optional
but make a more substantial scone. Pecans also work well, and you could add raisins or experiment with
other fruit.                        

For your type:  Almost all of the blood types (other than O non-secretors) can enjoy these scones. They
are a little heavy for Kapha, who should probably consider them a treat. For Vatas, the oats and nuts
are very grounding.

1 1/2  cups oat flour
1        cup spelt flour
4        Tbs. turbinado sugar/other sweetener
1        tsp. baking powder
1/2     tsp salt
1        Tbs. cinnamon
1     stick (1/4 lb or 125 g) unsalted butter at  
       room temperature, cut in small pieces
1     egg
1/2   cup milk
1      cup walnuts, coarsely chopped
1/2   tsp vanilla (optional)
